Domaine des Perdrix is spread over 12 hectares of the Cote de Nuits, half of which are either Grand Cru or Premier Cru vineyards. They exclusively harvest Pinot Noir grapes, keeping yields small to concentrate the character of the terroir in the finished wine.
Traditional techniques are relied upon exclusively. Ripeness is determined by tasting the fruit and crunching the pips, and harvests and sorting is completed by hand before the grapes are placed in vats for vinification.
