Chistophe Drag took over from his father in law, Jean Chauvenet in 1994. His methods are traditional, there is nothing overley interventionist, but they are thorough and very detailed. Low yields are key to quality and a hard prune of the 45 year old vines sets the right tone even before the grapes arrive. Also of note are manual harvesting, cold maceration, long malos and bottling without fining or filtration. This is serious wine making and one of the foremost addresses in Nuits Saint Georges.
