Madame Bollinger was a skeptic towards rose Champagne and would only permit its production if it were truly excellent. Naturally the winemakers at Bollinger retrieved this thrown gauntlet and crafted a wine she would be proud of!

This exquisite wine is a blend of 67% Pinot Noir, 28% Chardonnay and 5% Cote aux Enfants red wines. The richness of this Champagne makes it a versatile partner to duck, game, asian dishes and fruit deserts! 

Information About Bollinger

The House of Bollinger was founded in the village of Ay in the Vallee de La Marne in 1829. This is one of the key centres of excellence in Champagne production, with 100% Grands Crus Vineyards surrounding the property.

Jacques Bollinger took over the family firm in 1918 from his father George, it was Jacques' marriage to Emily Law de Lauriston Bourbers known as "Lilly" which pushed the Bollinger brand onto new heights as she was a great ambassador, travelling the world tirelessly to promote the great wines.  She famously said...

"I drink it when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it..unless I’m thirsty."

Fine persistent bead, the nose is quite reserved but there is a strong deep seated Pinot character underneath, red fruits, quite perfumed, slightly earthy, the palate is suitably tight for a relatively young wine, the quality is all on the finish, really fine long and complex. It needs to relax a touch for me, a couple of years at least further bottle development. An admirable wine with a potentially excellent future.

In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
